Quick and easy delicious dish that can be used for lunch, brunch or dinner.
Serves 4 – Easy – 30mins to prepare – 30mins to cook
Ingredients
1 packet of Barry John Bacon & Cheddar Cheese gourmet pork sausages
1kg floury potatoes – (Roosters) – Peeled & cut into small chunks
small bunch spring onions, sliced
40g butter
Small amount of oil for frying the sausages
140g frozen peas
Gravy Granules – made up as per method on packet/jar
Salt & Pepper
Method
Boil up the potatoes, mash them and add butter & chopped scallions, set aside.
Turn on the oven to heat up (180°C).
Put small amount of oil in a frying pan and fry up the sausages until golden brown. Remove from pan and cut into bite size chunks.
Follow method for making gravy granules from the jar/packet you prefer to use. Make enough to cover the chopped sausages. (500ml/750ml approx).
In a deep casserole dish, put the cut sausages & frozen peas into it. Add salt & pepper to desired taste. Pour the gravy on top and stir. Add the mash over the sausages and smooth it out.
Bake in a hot oven for approx. 30 mins, until the potatoes have a nice golden-brown colour.
