Salt and pepper
2 tablespoons unsalted butter
4 Barry John Sausages – (Choose your favourite flavour)
6 large eggs
¼ cup whole milk
Melt butter in a pan over medium heat. Add the sausages. Cook, stirring occasionally, until browned on all sides, about 5/8 minutes. When cooked through, remove from pan and leave aside.
While the sausages are cooking, whisk eggs with milk in a medium bowl; season with salt and pepper.
When the sausages have cooled down a bit, cut the sausages into bite size pieces.
Finally, melt a small bit of butter in the pan over a medium heat, add back in the sausages and pour in the egg mixture and cook, stirring constantly, until eggs are set but still creamy, about 1/2 minutes. Serve immediately with warm toast or bagel.
